After four years of culinary creativity, we’ll be taking a culinary year of reflection in 2026. We want to make space for our young family, new inspiration, and a deeper focus on our kitchen.
The restaurant will continue under the name Amaranth and reopen after the summer of 2026 with a renewed concept — more intimate, more flavourful, and with the kitchen as its beating heart.
Until 18 December 2025, we’re happy to welcome you as you know Amaranth today. Gift vouchers remain valid, but no new ones will be sold.
In the meantime, we’ll stay active with open training programmes, our third book, the redesign of our garden, and festive takeaway boxes for the holiday season.

Welcome to Amaranth
Amaranth is a project of vegan chef Pieter-Jan Lint and his partner Carmen Duytschaever. Together they converted an old villa full of character into a warm, cosy and contemporary restaurant.

Amaranth is the first gastronomic vegan restaurant in Flanders and wants to set the pace for new possibilities within the culinary landscape.
